Masala Omelette with Whole-Wheat Flatbread for Suhoor
Ingredients for 2 servings
- 4 eggs
- 1 small tomato, finely chopped
- 1/4 onion, finely chopped
- 1 small green chilli, optional
- 2 tablespoons chopped coriander
- 1 teaspoon cooking oil
- 2 whole-wheat chapatis or parathas
- Plain yoghurt and fruit to serve, optional
Method
- Beat the eggs with the chopped vegetables and herbs.
- Heat a non-stick pan with the oil over medium heat.
- Cook the egg mixture until fully set, turning or folding as preferred.
- Serve immediately with the flatbread.
Make it practical before Fajr
Chop the vegetables the night before and keep them covered in the refrigerator. Cook eggs thoroughly, especially for pregnant people, older adults and anyone at higher risk from food-borne illness. If a heavy fried paratha causes discomfort, use chapati or another lighter whole-grain bread.
Control oil and salt without stripping away flavour
Use a measured amount of oil and rely on herbs, chilli, cumin or black pepper for flavour. If you use a packaged paratha, check the serving size and sodium rather than assuming every flatbread has the same nutrition profile.
Make-ahead boundaries
Vegetables can be chopped in advance, but the egg mixture is best prepared and cooked close to serving. Refrigerate cooked leftovers promptly and reheat thoroughly if used later.
Vegetarian protein alternatives
The recipe already uses eggs as its main protein. If eggs are unsuitable, a chickpea-flour vegetable pancake can fill a similar role, but cooking time and texture will change.
Control the pan heat
Cook the onion and vegetables briefly before or with the egg depending on the texture you want, then keep the heat moderate so the egg sets without becoming rubbery. Warm the paratha separately so excess oil is not needed to finish the omelette.
Prepare faster at Suhoor
Chop onion, tomato, chilli and herbs the night before and refrigerate them covered. Beat the eggs only when ready to cook. If using leftover cooked vegetables, reheat them thoroughly in the pan before adding the egg.
Adjusting the meal
For a lighter version, pair the omelette with whole-grain flatbread rather than adding more frying fat. For a larger meal, add yoghurt or fruit separately instead of doubling only the paratha. Handle raw egg carefully and cook until set.
