Chicken, Rice and Vegetable Iftar Bowl

Ingredients for 4 servings

  • 500 g boneless chicken, cut into pieces
  • 2 cups cooked rice
  • 3 cups mixed vegetables
  • 1 tablespoon cooking oil
  • Garlic, paprika and black pepper to taste
  • Lemon and yoghurt sauce, optional

Method

  1. Season the chicken and cook it in the oil until fully cooked through.
  2. Cook or reheat the vegetables until tender-crisp.
  3. Divide rice, vegetables and chicken among bowls.
  4. Add lemon or a yoghurt-based sauce immediately before serving.

Food safety

Use a food thermometer where possible; poultry should reach a safe internal temperature according to your national food-safety guidance. Refrigerate cooked chicken promptly and avoid leaving large trays at room temperature through a long gathering.

Substitutions

Use chickpeas, beans or tofu instead of chicken for a meat-free version. Brown or white rice can both be used; choose based on preference and digestion rather than treating one grain as universally superior.

Batch strategy

Cook rice and vegetables separately so portions can be adjusted for different appetites. If preparing ahead, cool rice promptly and refrigerate; cooked rice should not sit warm for extended periods because bacterial spores can survive cooking and multiply during improper storage.

Chicken substitutions

Use lean beef, fish, tofu, chickpeas or beans if preferred. Each substitute has a different safe cooking method, so do not apply the poultry temperature rule to every protein.

Turn it into a family serving station

Put rice, vegetables, protein and sauces in separate dishes. This helps children and adults choose appropriate portions and makes allergen management easier than mixing everything into one tray.

Cook each component safely

Cook chicken until it is safely done throughout and avoid transferring cooked food back to a plate that held raw poultry. Rice should be cooled quickly if prepared ahead and refrigerated promptly rather than left warm for hours.

Batch preparation

Prepare rice and cooked chicken in measured portions, then add fresh vegetables and sauce at serving. This keeps textures better and makes it easier to reheat only what will be eaten.

Substitutions

Beans or lentils can replace chicken for a meat-free version; adjust seasoning and reheating time accordingly. Brown rice, white rice or another grain can be used, but the cooking liquid and time should follow that grain’s package directions rather than being copied blindly.
